Title: Country Oat Cake

Yield: 16 Servings

CAKE
1pkSpice cake mix (18.5 oz.)
1cQuaker Oats, uncooked - (quick or old-fashioned)
8ozPlain low-fat yogurt
3 Eggs; OR...
3/4c-Egg substitute
1/4cVegetable oil
1/4cWater
1 1/2cFinely chopped apple - (about 2 medium)
TOPPING
1cQuaker Oats, uncooked - (quick or old-fashioned)
1/2cBrown sugar, firmly packed
1/4cMargarine or butter; melted
1/2tsGround cinnamon
  Whipped cream (optional)

Heat oven to 350 F. Grease and flour 13 x 9-inch baking pan. For cake, combine first six ingredients. Blend on low speed of electric mixer until moistened; mix at medium speed 2 minutes. Stir in apple. Pour into prepared pan. For topping, combine oats, brown sugar, margarine and cinnamon; mix well. Sprinkle evenly over batter. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Serve with whipped cream, if desired.
